Fruit Slice

This is a recipe my Australian friend and colleague gave me.
This is her original recipe, which is quite good, because it contains oat flakes, dried fruit etc.

Fruit slice
1 cup of coconut
1 cup of self-raising flour
1 cup of sultanas
1 cup of your favourite muesli
1/2 cup of sugar
1 and a half cups of milk

Mix and stir all the ingredients together – the mixture should be liquidy, but not too runny, if so, just add a bit more muesli to thicken it.
Pour onto a baking tray (lined with oven paper), bake in oven at 180° C for about 20 minutes, until light golden brown.
Once cooled, cut into slices.

I like it, but I’m going to try a healthier one next time.
My new list of ingredients:
1 cup of coconut
1 cup of whole-grain flour (1/2 cup rice flour, 1/2 cup wheat flour)
natural yeast extract
1 cup of sultanas
1 cup of your favourite muesli
1/3 cup of sugar
1 and a half cups of rice or oat drink
